Stone Tile Countertops – Dirty Grout and other Questions

We just bought our first house, and the kitchen has beautiful stone tile countertops and flooring. It appears that the grout was originally white, but most of it is now brown. I tried cleaning it with white vinegar and baking soda and it made absolutely no difference at all. I’m worried about using different cleaners, because I’m not sure what kind of stone the tiles are – is there any way to tell? Is there another safe method to try cleaning the grout? Would it be easier to re-grout? If so, do we have to pull up the old, or just cover it with new?
